This raised platform (or "seiro") is typically used for serving cold buckwheat soba noodles. Use the slot on the side to serve the choko (anything less than 3 1/2" dia) and garnishes such as scallion, nori seaweed and wasabi can be placed on the square section (or on a small square dish).
